Basque Opens In West Palm Beach At Historic Hotel Biba
“Best Taste of Coral Gables” three years in a row. “Best Paella in Miami” two years in a row. “Best Croqueta in Miami” in 2016. Those are just a few of the accomplishments chef Miguel Angel Rebolledo has received in the past few years.
Find out what makes him so praise-worthy at Basque, a new restaurant in West Palm Beach located at the historic Hotel Biba that opened in late March. Rebolledo is heading the restaurant’s team.
Basque serves Spanish tapas, entrees and paella from a 22-foot mobile kitchen. The restaurant features indoor and outdoor seating, most of which is located in a courtyard with a retractable cover.
The tapas menu consists of 14 dishes, including dates with applewood-smoked bacon, marcona almonds, tetilla cheese and apple emulsion; gambas ajillo with Key West pink shrimp, piparra and black garlic; and scallops grilled a la plancha with butternut squash puree and Pedro Ximénès.
Main plates will also be served. Guests can opt for the fish caito, which is crispy local lion fish, potato chips, piparras and tartar sauce; paella de vegetables with bomba rice, sofrito rojo, heirloom cauliflower, eggplant, wild mushrooms and fresh herbs; and salmon papillote.
Basque’s menu also features 18 vegetarian items, 12 of which are also vegan.
The full bar offers handcrafted cocktails, red, white and rosé sangria, a Spanish Wine list and frozen cocktails. Basque is also the exclusive Palm Beach County purveyor of Spain’s Estrella beer.
